If you’ve had and liked ricotta cheese or fresh mozzerella it’s very likely you will LOVE this cheese. The flavor of this Greek sheep’s milk cheese is delicate and light, similar to the aforementioned Italian offerings. It slices in slightly brittle but firm rounds and goes beautifully with plain crackers and crusty breads.
According to my former cheese monger, sheep’s milk cheese is much easier to digest because the fat molecules are smaller than in cow’s milk. For some reason as I’ve hit my early forties, this matters, digestively speaking. I feel much better eating less dairy overall but sheep and goat dairy products work very well for me.
